Baked Eggs, Ohio Bed and Breakfast

The Millersburg, Ohio, Barn Inn Bed and Breakfast serves a full country breakfast daily.  Each time I serve our Broccoli Salsa Baked Eggs, people ask for the recipe.

Broccoli Salsa Baked Eggs

8 oz. ground sausage
1 10 oz pkg chopped broccoli
8 eggs, lightly beaten
1 cup Ricotta cheese
1/4 cup milk
1/2 tsp. black pepper
1/2 tsp. McCormick's seasoned salt
1 1/2cup cheddar cheese
1 1/2- 2 cups medium salsa

Preheat oven to 350 degrees.  In a skillet, over medium high heat, brown the sausage evenly.  Drain and crumble the sausage and set aside.  Lightly grease a 7" x 11" glass pan.  Microwave the broccoli until about half cooked and drain off any liquid.  You may use either fresh broccoli or frozen.  In a bowl, combine sausage, broccoli, and 1/2 cup cheddar cheese.  Spoon into the prepared baking pan.  Stir together another 1/2 cup cheddar cheese, eggs, ricotta cheese, milk, pepper, and seasoned salt; pour over the broccoli mixture. Sprinkle the remaining 1/2 cup cheddar cheese on top.  Next, top with the mixture with spoonfuls of salsa.  Loosly cover with tin foil and bake 1 hour or until eggs are set.  Allow to set for about 5 minutes before cutting into squares for serving.  Serves 12.

Another very good egg recipe is Aussie Breakfast Egg Mess.   Many more recipe choices may be found at Simply Recipes.
